Biggest Loser Egg White Veggie Omelet

4-5 egg whites
1 cup of spinach
1/4 cup chopped onion
1/4 cup chopped zucchini
1/4 cup green/red/yellow bell pepper
1/8 cup chopped jalapenos (optional)
1 clove of garlic or minced garlic
1 wedge of Laughing Cow cheese, chopped (any flavor)
2 tablespoons of picante sauce (optional)
Mrs. Dash Onion & Herb seasoning

Instructions:

Spray a medium nonstick skillet with olive oil spray. Set over medium heat. Add the onion, zucchini, bell peppers, jalapenos, and garlic. Cook, stirring occasionally, for 4 to 5 minutes until the onion is almost tender. Add the spinach and cook for 1 to 2 minutes or until wilted. Remove the vegetables to a plate. Cover and set aside to keep warm.

In a bowl, whisk the egg whites, Mrs. Dash, Laughing Cow cheese and hot sauce until the egg whites bubble lightly.

Coat the pan with olive oil spray. Set over medium heat.

Pour the egg white mixture into the pan. Cook, lifting the edges with a spatula as they start to set and tipping the pan for uncooked egg whites to run underneath, for 2 to 3 minutes, or until almost set. Flip the omelet.

Spoon the vegetables over the egg-white mixture. Cover and cook for 1 to 2 minutes or until the cheese is melted. Fold the omelet in half. Plate it and serve with more hot sauce on top if desired.

It’s true. You are much stronger than you think. Fortunately I get to see this inspirational fact in action every day at Strala, especially in our STRONG classes. It’s very exciting to be able to do something that you didn’t think you could do, which is good reinforcement that we are, in fact, stronger than we often think.
Good old Stuart Smalley had us all at, “I’m good enough, smart enough, and doggone it, people like me!” in his famous “Saturday Night Live” sketch.  We all love it because we all know it’s true, and we all need the reminder.
It’s true that we’re not really afraid of failure — we know what that looks like — but we’re really afraid of success. Success is completely unscripted, unknown, and can be crazy scary.  But when you come to learn how to be okay with the unknown, and actually excited by the unknown, success is a possibility. The more comfortable you are with not knowing and the more excited you are about possibilities, the more room for success you create. 
Now, of course there is a lot of work to do to achieve your goals, but often we have to get over the tricky little trickster that is the mind, trying to tease us and convince us that what we are trying to do is impossible.  If you believe it, it is true for you. Once you’re able to get past the tricks of the mind, you can begin to engage the mind to actually do something useful for you — which is to observe. In order to really grow in the direction of success, you need to be able to observe yourself.  This is meditation, yoga, and successful living. 
If you are a person that gives up easily, you should get to know that part of yourself so you can face it and change it.
If you are a person who forces their way through to the other side, burning fumes everywhere with steam coming out of your ears, you should get to know that part of yourself so you can find some efficiency.
If you analyze and judge everything about yourself constantly, you are probably doing the same of everyone else and holding yourself back in so many ways. Get to know that part of yourself so you can change.
You are so much stronger than you think.
Get used to it.
Do something about it.
